Kitchen Update: Plywood Counters are the newest rage!


I remember the day that I walked into our house for the first time.  It was a hot mess. . . But not nearly as bad as some of the homes that we had walked through a year before when our home search initially began.  All the details of the home were just not my style, in a time, where I wasn’t sure what my style was, but I knew that wasn’t it. Yellowish linoleum that had a cut through the center of it (not a joke), green ivy wallpaper AND border, baby poop brown cabinets.  It just wasn’t my style.  My husband and his friend (also our realtor) kept telling me “It has such great bones.”  Look past the wallpaper and just eve the house as a skeleton and look at it’s potential.  A short time later, we had the keys to our house and moved in the week of Christmas.

 The reality was our budget didn’t leave room for a new build or a fancy remodel, but it did check off a few of our boxes.  We had just celebrated the first birthday of our first born and I had quit my job to stay at home with Ethan. Jon was working his day job and teaching math classes online. We dreamt of having a master bathroom with 2 sinks, 3 bedrooms, a separate dining room, and if we could make it work, we wanted a living room and family room. If you asked me back then, I probably wouldn’t have told you that I loved my house, but I can now.

Over the years, we’ve been able to slowly make some deliberate changes to our home to make it more welcoming as our budget has allowed. You can find more about our home story here. One of the biggest things we’ve dreamed about is our kitchen.  We were so lucky that came with some great white square tile counters (minus the disgusting grout. . . Or what’s left of the grout), so we had previously painted the cabinets, redid the flooring, painted, and added wainscoting.  However, our stove top had been on it last life (only 1 and a half burners really worked. . . Probably the original 1966 stovetop!).  We have dreamed and saved and dreamed and saved and finally, we started ordering new appliances for our kitchen and stock piling them in our garage. . . 2021 was a hard year for getting things in in a decent time frame and last summer finally met with a Contractor and Kitchen designer, who is actually a friend and let me give her my vision and let me go with it.  She made it happen, with all her technical skills and experience.  So last month, while we were hanging out in Disneyland, they came in and removed all the old countertops and some appliances.  (Insert VERY happy dance from me here!)

 As I write this, I am sitting in a local Starbucks drinking coffee because my kitchen has exploded into all areas of our house.  Redoing a kitchen (or any room for the matter) is definitely a process that teaches you to be patient.  It definitely doesn’t happen lickitly split like it does on tv, because they edit all the in between stuff out.  Currently, we are in a period of waiting.  Demo is finished, but waiting on the granite installer to be ready to do his thing.  On average this part of the process seems to take about 3 weeks.  Our neighbors are just a few weeks ahead of us on their kitchen projects, with it is with a different contractor and it’s the same time frame.  So, if all goes according to plan, granite will be installed tomorrow!  And then, we can get the contractor to come out and install everything and start our backsplash. 

In the meantime, we are enjoying our plywood counters. . . I think we will start a new trend.  This afternoon, I might take some time to write some scripture on them before they get installed.  Anyone have a verse they want to put on?  Throw it down in the comments! 

Needless to say, we are getting really creative around here.  Jon says we are saving so much time not having to empty the dishwasher, because the water to our kitchen has been shut off. . . The sink isn’t set up quite yet. . . Gotta wait for those countertops!  I am getting to be really great friends with our grill and am so thankful for cast iron skillets!  We also have been taking advantage our our Onni pizza oven (I froze lots of pizza dough in preparation for this!).  I am so glad that the weather has been pretty great because it has been nice to be able to cook outside and not have to eat take out every night!

For the love of Disney (and all their recent updates!)

 Traveling is one of our favorite things to do.  It energizes us, exhausts us (in a really, good way!), and gives us time together.  Whether its traveling to a big city full of historical landmarks and tall buildings, hiking a trail by the beach, or making our way from ride to ride at Disneyland, I love it.  It’s one of the reasons I fell in love with my husband and our kids have caught the bug.  Funny Story:  Remember back in 2020 when everything shut down?  We had just picked our kids up from school right as our school district announcement that school would close for 2 weeks (ha ha!) and Ethan runs in and is like, “where could we go?” He was 100 percent ready to use that time to travel. . . Forgetting that it was a pandemic!  I’m so thankful that year we were able to fit in our annual disney trip before everything shut down.

Disneyland is one of my favorite places. We took our kids there for the first time when they were 4 ½ and 2 and fell in love with the park even more!  We try to go once a year and it’s a time that we all cherish.  The kids are getting older and are loving the roller coasters and I think it make the husband so happy he has people to join him on Guardians of the Galaxy. . . No sudden drops for me! (I am a total wimp and am okay with that!)

 This year we postponed our annual trip a few weeks so in coincided with our kitchen demo. . . If we were going to be eating out, we might as well be at Disneyland and did we really want to be home with all that banging and dust?  No thank you. The timing worked out and it was fabulous.  Plus, Jon put a ring camera in the kitchen so we could watch the destruction in real time.   

 Recently Disney made some new changes to how the parks work and if you haven’t been since before 2020, you might be in for a surprise on how things are different.  I think that a lot of the changes are great. . . Some not so much, but not enough to keep me from going.  Here’s kind of the rundown of our experience

Tickets:

We purchased a 1 day California Adventure ticket and a 1 day Disneyland ticket.   No park hoppers.  We don’t think park hopping is worth it because you spend a lot of time walking back and forth.  Also, if you can’t even start park hopping until 1pm.  All tickets have to be purchased in advance with a reservation.  Gone are the days of spontaneous Disneyland trips because in many cases they sell out quick.  On the plus side, they haven’t been opening as many tickets as they used to for one day.  Yes, it gets crowded, but not hoards of people you can’t even walk crowded (we’ve done that.. . It’s not ideal). 

 Genie Plus:

Fast Passes are now a thing of the past.  There’s no longer little kiosks around to get paper tickets, it’s all done via the Disneyland App.  It does cost an extra $20 per day per ticket.  We decided to try it out since we were going at a busier time.  It was 100 percent worth it, because we got to ride so many rides.  You can schedule your lightning lane pass on the app and then you use the generated bar code on your app to redeem your lightning lane ticket.  Very much like the way fast passes worked, except digital.  You can only have one scheduled at a time, but you can start scheduling the next one as you are walking through the line of the one you just redeemed.  My favorite thing about this was that there were so many more rides that now have the lightning lane capabilities! The draw back is that rides like Radiator Springs Racers and The Rise of the Resistance rides require an extra fee to ride.  We did not partake in the extra fees because we think it’s a little ridiculous.  We chose to wait in line for the rides, except for Resistance. . . We’ve ridden it and it’s amazing, but it was a really long line and it was constantly breaking down that day.  To us, it wasn’t worth our time when there are so many other things to do. 

A huge perk to the genie pass is that if you use your lightning pass for a particular ride and it breaks down during your scheduled hour block, they will send you a free pass to ride another ride during this time.  This does not take away from your regularly assigned 1 lightning pass per ride per genie plus.  So. . . Let me break that down for you.  We had lightning lane passes for the Matterhorn, but it broke down when we were supposed to redeem them.  The app let us know and suggested some other options for us.  We used it on Autopia and then we were able to use our regularly assigned lightning lane pass for the ride later in the day.  It’s like Disney saying, don’t feel like you wasted your lightning lane opportunity. . . We’ve got you.  I really appreciated that.  

 Another perk of the genie+ pass is that it covers all your pictures you have taken on your Disney adventure.  They scan a qr code on your phone and after a small amount of time, your ride pictures and photo pictures all show up on your phone and are super easy to download.  This is makes it pretty easy to make sure you get that great family photo in front of the castle.  

Disneyland App: 

We absolutely love the app.  We’ve always used it to track the status of rides and such, but they have made it way more usable.  First of all, your tickets are stored on the app, so when you arrive in the morning, you just scan the app.  They still give you paper tickets just in case you want to split up and go different directions/different parks.  Second, this is where you access your lightning lane status, if you paid for the genie+ feature (and where you can add on the bonus lightning lanes for the highly desirable rides.  Lastly, the Disneyland app is also where can order food from the majority of eateries around the parks.  You just schedule it for the time that you want and let them know (via the app) that you are on your way to pick up and they will start preparing it.  There were a few restaurants where this wasn’t available, but places like outside the Tiki Room, where you order Dole Whips, you can only order through the app. 

 
Right now, that’s pretty much all the changes that were made (that I know of)  Just after we left, Disney lowered their masking policy, so if you go now,  you don’t have to wear a mask on indoor rides (which is a huge relief of on rides like Space Mountain. . . That was hard!).  There are some places that are undergoing construction. . .like in downtown Disney between the majority of the shops and the Disneyland hotel and I believe Toon Town is getting a face lift soon (and a new ride is being built as we speak!). 
 Food Allergies:
 
As a family that has food allergy issues, it is always a relief at Disneyland with how open they are about their ingredients and how flexible they are.  You can always ask for an allergy friendly menu from most of the restaurants, even in Downtown Disney.  This trip, we were surprised to see vegan friendly cheese available at Pizza Planet in Tomorrowland.  We also found that the app ordering made it super easy to find what accommodations could be made for food allergies.  Not every food place is as easy, though. . . the chicken sandwiches by Autopia must be ordered as is. . . so if you don't like mayo, don't eat there.  Other than that one restaurant, we have always found food allergies to be embraced and not something that has to be a hassle. 

I know there’s a lot of controversy over how expensive it is to go to Disneyland, but there are so many new rides and updates each year, it is fun (albeit expensive) to watch and experience the magic. . . Because it really is magical!

What's for Dinner {March 2022}

 I have a serious case of the Wednesdays. It's that mid week hump that gets me. . .every single week!  Thank goodness for coffee or else I am uncertain I would get anything done today!  Who's with me?!?!?  Anyways, we are currently in the midst of a kitchen update and trying to avoid eating out as much as possible (no sink, no stove, no problem, right?).  But, the mess has left me so unmotivated and feeling uncreative.  It's a wonder I'm even sitting down to type. . . ha ha.  So, if I sound a bit discombobulated, that's probably why.   Also, there is so much going on in the world right now that it's just hard not to keep checking to see what's happening now.  

Anyways, I spent a good chunk of my day hiding from the world and watching a few Sweet Magnolias episodes in between laundry loads and remembering to get the chicken out for dinner. . . cause despite everything that is going on, we still need to eat food.  

Making dinner every night can be incredibly overwhelming.  No matter how hard we work, there are still mouths to feed, including our own.  Every few months, I like to sit down and share some of my favorite new recipe finds.  It's my hope to inspire you to take the time to find and try out new recipes that get you and your family excited to come home for dinner and maybe even gather around the table together.

Here are some things we've found:

1.  Brown Butter Sage Chicken Pot Pie

This is a favorite of ours and probably Weston's most requested dish (and he's our picky eater!).  It's super easy and tastes absolutely amazing.  I usually double it because we hope there are leftovers! It's super easy to adapt to dairy allergies. . . and we just sort of deal with the puff pastry, but it hasn't caused issues yet, so we aren't going to get rid of that. . . I mean puff pastry (if I could, I would add the emoji with the heart eyes because that's how we feel about pastry anything over here!).  This one is in her cookbook, but you can find the recipe here, thanks to Random House Publishing! 

 

 
2.  Ground Orange Chicken

We are HUGE Orange chicken eaters over here.  I'm not going to sugar coat this at all, but we are frequent buyers or trader Joe's Orange Chicken and I absolutely love this homemade version by Damn Delicious.  However, sometimes we just need to make something quick and we don't have the Trader Joe's crack in the freezer and this one is always a hit.  Plus, I can sub out the soy so Weston can eat it, too!  It's super easy and comes together so easily!  This is another one I like to double so I can have some for lunches during the week. 3.  Thai Peanut Ramen

This is absolutely one of my favorite dishes. . . and also one that I am missing not having a stove at the present moment (hopefully soon, though!).  This is definitely one of the first things I will be making once it's installed.  I've made this several times and each time it didn't disapoint (well, maybe one time, but that was 100 percent user error. . . don't stick the ramen in until right before you want to sit down. . . it soaks up all the goodness and makes a great tasting sludge. .  . please, learn from my mistake!).  It's also by Half Baked Harvest and if you haven't figured it out, I love her recipes!

For your Sweet Tooth: Afterschool Cookies, by Joy the Baker

In my stress of prepping for our kitchen demo, I quickly made dough balls of a few different cookies. . . this particular recipe by Joy the Baker.  These are so good! I can't wait for the next excuse to bake up some.  Also, do yourself a favor. . . make some cookie dough and scoop out all the balls and flash freeze them on your cookie sheet.  Tomorrow, throw them all in a ziplock freezer bag and then you have cookies for your next movie night (there's some great family friendly ones coming out next week!)

Cookbook Spotlight: Snacking Cakes

I saw someone else post about this cookbook over on the gram and was intrigued.  I love a good snacking cake. . . they're small and simple and the perfect solution for a last minute dinner party or when you need to bring something to the work potluck.  I checked mine out at the local library and recently had to return it (so sad!), but it's definitely hanging out in my amazon cart.  I've tried the lemon olive oil cake and the peanut butter chocolate cake and they were all hits!  This is cookbook deserves a space on the shelf!

 Well, that's all I have for you for now and I it's getting time for me to start making dinner.  Right now, I am so thankful for my husbands grill because it is saving us big time!  Expect a post on how we cooked without a working kitchen coming eventually!
