Buttermilk Spice Muffins

This has been the strangest week.  But, I wouldn't trade it for anything.  I got to go to my happy place (San Francisco) for my birthday.  It was a lot of work, but tonight, we are all back under the same roof and reality is setting in.  I'm also a year older. . . 35!  Believe it or not, I just don't feel that old.  I hope I always feel young!   So, before I head into an incredibly busy (and fun) weekend, I wanted to share this delicious recipe with you.  

One of my favorite places to have a good muffin is Mimi's cafe.  The Carrot Raisin is my favorite and previously posted this recipe. My sister has always favored their Buttermilk muffin, which is pretty delicious (a close second to the carrot raisin, but still delicious!).  Also, did you know that Mimi's has recipes on their website.  Yeppers!  And it's wonderful!  It was a huge hit with the boys in my house. . . they are, afterall, my biggest critics!.  





Mimi's Buttermilk Spice Muffins

Ingredients:
1 cup sugar
1/2 cup butter, unsalted
3 eggs
2 1/2 cup flour
2 tsp baking soda
1 tsp nutmeg
1/2 tsp cinnamon
3/4 cup plus 1 Tbs buttermilk
1/2 cup sugar
1 cup walnuts
1/2 tsp cinnamon
1/2 tsp nutmeg

Directions:
Preheat oven to 375.
In a mixing bowl, cream together sugar and butter.  In a separate bowl, sift together flour, baking soda, and spices.  Add flour mixture to butter mixture alternately with buttermilk.  Don't over mix.
Make the nut topping by mixing sugar, walnuts, cinnamon, and nutmeg in a small bowl.   Line your favorite muffin tin with some fun liners and fill 3/4 of the way full.  Add a spoonful of topping on top of each cup of batter.  Bake for 20 to 25 minutes.
